HEALTHY POWER COOKIES
As you would know, I am a bit of a health nut. But I've really struggled giving up my favourite guilty indulgences. So to start with, I went on the hunt for healthy alternatives to cookies. That was when I stumbled upon Dr Mike Moreno's 'Power Cookie'. Dr Mike is the author of the 17 day diet, which I have since tried and can tell you it works wonders! You can find more information about the diet HERE. But here is my version of the Power Cookie (I've tweaked some things to better suit me)
Ingredients:
1/3 cup Pureed Apple
2 tbs Almond Paste
1 tbs Flaxseed Oil
10 flat tsp Dextrose Powder
1/4 cup of fruit juice
1 Large Egg (vegan egg substitute)
1/2 tsp Vanilla Essence
3/4 cup Gluten Free Whole Wheat Flour
1/2 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt
1/4 tsp Black Pepper
1/2 cup Vanilla Whey Powder
1 1/2 cups Oats
1/2 cup Quinoa
1 cup of Glaced Cherries
1/2 cup Sliced Almonds
Method:
1.) Preheat your oven to 250 degrees celcius.
2.) Beat together the apple puree., almond paste, flaxseed oil, dextrose powder and fruit juice until smooth in consistency.
3.) Mix in the egg and vanilla essence before adding the flour, baking soda, salt, pepper and whey powder. Stir well.
4.) Dice the Glaced Cherries into quarters and add to mixture with the oats, quinoa and almonds and mix well until combined.
5.) Prepare a baking tray and spray lightly with vegetable cooking spray. Using a tablespoon, drop the batter onto the tray so that you have around 18 cookies.
6.) Flatten cookies with the back of your spoon and bake for 16-18 minutes or until golden brown.
7.) Remove from the oven and leave to cool. Store in a cool dry container.
8.) You can stop here, or you can cheat like I did and drizzle some melted dark chocolate over the top for a little bit of a sweet kick.
Viola!
Each cookie contains around 128 calories (without the chocolate) and is a fundamental snack food within the 17 Day Diet. If you're trying to shed a few kilos or if you're just interested in eating healthily, definitely give it a go!
See you next time with another healthy recipe!
